As a sous chef you are responsible for assisting with the overall success of the food program and overseeing culinary functions of the company. The position entails assisting in all phases of planning, ordering, inventory, food preparation, and production. This includes adhering to health department and joint commission regulations, company standards, and expectations of food quality. The sous chef also motivates, trains, develops, and directs the culinary employees in preparing and cooking foods to accomplish the objectives of the operation. Duties: Assist in coordinating and participating in the preparation and cooking of various food items. Assists the Executive Chef with planning and creating menus and food service processes. Rolls out new culinary programs in conjunction with the Executive Chef and culinary team. Assists the Executive Chef with managing costs and controlling expenditure and waste. Direct and participates in maintaining clean equipment and the kitchen area. Fills in for the Executive Chef when necessary. Manage the kitchen staff, including providing necessary direction and training. Orders food, and supplies. Performs other duties as assigned.

Education: Associates degree or equivalent knowledge and experience.
Experience: Culinary Supervisor/Executive Sous Chef-- Minimum of 2 years culinary management at the Sous chef/kitchen manager level or higher. Culinary degree or equivalent job experience required. ACF-CSC "Certified Sous Chef" or greater preferred, or the ability to obtain an ACF- CSC level certification or higher within one year. ServSafe Certification or ability to pass ServSafe manager certification test within 30 days of hire. Ability to follow specific written, and verbal directions from the Executive Chef, Directors, and Managers. Proven track record of ability to direct kitchen staff, and holding staff accountable to values and standards of the company. Solid understanding of cooking methods, ingredients, kitchen equipment, and related processes. Advanced knowledge of food sanitation, safety, and food service operations. Time management strengths with the ability to multi-task. Must be team player that pays attention to detail. Flexibility is a must with the availability to work weekends and holidays.
Licensure, certification, and/or registration: Certified Dietary Manager preferred. SERV-Safe Certification or equivalent certification from the Virginia Health Department is required; or ability to obtain certification within year one in this position.
Other Minimum Qualifications: Must have good public relations skills with customers, employees and other key stakeholders including senior leadership. Must be capable of communicating verbal and written orders, directions, supervisory guidance and technical assistance as needed to a diverse workforce. General interest in the development of subordinates to meet institution and patient care needs.
